Pear & Aztec Fruit Crumble

A classic pear crumble with a twist from the custard-like white sapote or ‘Aztec fruit’. You can make these as 4 individual crumbles or one large one. Serve with a scoop of luscious Quince Ice Cream on top!

Ingredients
  • 3 pears
  • 1 [url href=”http://instagram.com/p/Y7pHA7n1qA/” target=”_blank” title=”Aztec fruit – Instagram”]Aztec fruit[/url] / white sapote (or 1 more pear)
  • 1/2 cup rolled oats
  • ¼ cup almond meal
  • ¼ cup wholemeal flour
  • 1 Tbsp sugar
  • ½ tsp cinnamon powder
  • 40g room temperature butter
Instructions
  1. Preheat your oven to 180C
  2. Peel and core your pears and remove the skin and pips from the Aztec fruit. Chop into pieces, as small or large as you like.
  3. Place into the dishes you’re baking in and sprinkle 1 tbsp of the sugar across the top. I made individual ones but you could make a single larger one.
  4. In another bowl, rub the butter into the oats, flour, almond meal, cinnamon and sugar, using your fingers. This should create a “bread crumb” like mixture.
  5. Sprinkle crumble over the top your your fruit.
  6. Bake for 20-30 minutes until crispy and golden brown. Serve immediately with ice cream.
