The title of the recipe says it all! Sweet autumn pears and figs mingle with earthy roast beetroot, crisp walnuts and hearty lentils. Add tuna to turn this into a main meal, or top with goat cheese to keep it vegetarian. You can even multiply the recipe and plate it up on a large platter to serve family style for a large group.
A Simple Autumn Salad & Tahini Dressing

This salad makes the most of autumn fruit layering figs and pears with earthy roasted beetroot and crisp walnuts. Serve as a side, a starter or even a light main meal.
Ingredients
- Salad
- 1 x pear, cored and sliced into thin wedges
- 1 x avocado, flesh cut into fine slices
- 1/3 cup walnuts, lightly roasted
- 1/3 cup cooked puy lentils (or tinned)
- 2 x fresh figs, cut into wedges
- 2 cups shredded iceberg lettuce or rocket (arugula)
- 2 x 90g tin tuna, in springwater, drained
- 2 cups, diced, roasted beetroot
- Dressing
- 1/4 cup tahini
- 1/4 cup apple cider vinegar
- 1 x clove garlic, minced
- 1 tsp Dijon mustard
- 1 tsp seeded mustard
- 1 tsp rice malt syrup (or maple syrup or honey)
- To Serve
- Extra walnuts and fresh coriander (cilantro) leaves
Instructions
Make Dressing
- In a large jar or blender place all the tahini dressing ingredients and shake/blend to combine. Set aside.
Make Salad
- In a large bowl place all the salad ingredients except the roasted beetroot & tuna. Toss lightly to combine.
- Place salad on plates or a large platter, sprinkle over the beetroot to avoid staining the rest of the salad. Top with tuna.
- Lightly drizzle over the tahini dressing, sprinkle with a few extra walnuts and a scattering of fresh coriander.
