This cordial makes a stunning centrepiece at any lazy lunch and takes full advantage of late summer and early autumn buckets of sweet plums. Spiced with warm cloves and lifted with fresh lemon juice, adjust the sugar to suit your tastes. Just make sure to save a splash for us!
- 20 plums
- 1 cup water
- 2 cups sugar, or more/less to taste
- 5 whole cloves
- 1 cinnamon stick
- juice of one lemon
- Quarter plums and remove stones.
- Place fruit, water, sugar and spices in a heavy sauce pan and simmer for 20 minutes until fruit has broken down.
- Remove spices, puree and strain through a fine sieve. Stir through lemon juice to taste. Pour into sterilised bottles to store.
- Nice: Pour 1-2 Tbsp cordial into the bottom of a glass, top with sparkling wine or sparkling mineral water.
- Naughty: Pour 1-2 Tbsp over ice, top with 60 ml (2 shots) gin and club soda.
